2 Tbs. olive oil
1 carrot, diced
1 rib celery, diced
1/2 onion, diced
5 garlic cloves, minced
4 (8oz) cans tomato sauce
1 (14oz) can chicken broth
1 Tbs. dried parsley
1/2 Tbs. dried Italian seasoning
1 bay leaf
1 (15oz.) can cannellini beans, drained and rinsed
1 1/2 cups ditalini pasta
2-3 Italian sausages (hot, mild or sweet), casings removed

1. Brown sausage in pan w/ butter and crumble. Remove any grease from pan and discard.

2. Heat olive oil in saucepan over medium heat and sauté carrots, celery and onion until soft.
Add garlic and saute briefly.

3. Stir in tomato sauce, chicken broth, pepper, parsley, Italian seasoning and bay leaf - Simmer
for about 20 minutes.

4. Bring large pot of lightly salted water to a boil and cook pasta for about 8 minutes (al dente)
and drain.

5. Add beans to sauce mixture and simmer for a few minutes. Add pasta last and simmer for
another few minutes. Serve immediately with grated or shaved Parmesan cheese.
