6 boneless skinless chicken thighs (or your preference of type of chicken)
2 cans cream of mushroom soup (don't use cream of chicken!)
3/4 c dry sherry (I don't use cooking sherry, I use the big bottle of sherry)
Optional: pearl onions in a jar or 1/2 onion in slices (for flavor)
Kosher Salt
Open cans of soup into bowl, add wine and whisk into a sauce...
Pour 1/2 above mixture into oblong glass baking dish
Season chicken with a generous sprinkle of garlic, then add salt and pepper
Cover the chicken with remaining sauce
Bake at 350* for one hour and baste with sauce 1/2 way through.

This can stay in the oven a bit longer if need be.

This is a great recipe for e-z entertaining and I used this for a good "first date" dinner when I wasn't quite an experienced cook...however, it is still one of our family's favorites! It also re-heats well the next day. This recipe doubles nicely. Freezes too!
